Refreshing drinks for Christmas

Watermelon & Mint Punch

Combine 1 litre watermelon juice, juice of 2 lemons, 1 cup chopped mint, 1 litre ginger ale and ice cubes ~ refreshing.
Mint sprigs and strawberries to garnish.

 

Mulled Wine Syrup

850ml water
450g coconut sugar
6 citrus fruit cut into quarters
8 cloves
2 cinnamon sticks
2 bay leaves
2 star anise
½ nutmeg grated
1 tablespoon vanilla extract or one pod
½ tablespoon mixed spice.

METHOD: Add all ingredients to pot and bring to boil. Stir often to dissolve sugar and press down on the citrus fruit to release the juices. Simmer for 20 minutes until desired syrup consistency. Strain and pour into sterilised bottles and refrigerate. Lasts up to 8 weeks.

Warm 100ml of syrup with 1 bottle of wine or 1 litre apple juice. Or can be cooled and served over ice.
